They initially teamed up with a local producer of biodiverse olive oil and used some of their pruned tree branches to produce an ‘olive dust’ made out of 100% olive leaves. While the powder itself is slightly too bitter and potent to be ingested like a matcha, they added a selection of spices to turn it into a match
